This is the recipe to make Princess Want's Barkday Cake:
Sponge Cake:
2 Eggs
1 tbsp Honey/Sugar
40g Unbleached Flour
1/8 tsp Baking powder
15g Sunflower oil
1/4 tsp Strawberry paste
Icing:
50g Non dairy whipping cream (Whipped it up)
Mixed berries/fruits (blueberries/strawberry etcs)
1 tsp Instant Jelly for topping
100g water
Method:
Preheat oven at 180 deg C.
Line the base of a 7" round baking tin.
1. Whisk eggs, honey & strawberry paste till light & fluffy.
2. Fold in sieved flour & baking powder.
3. Follow by oil, mix well.
4. Pour into tin & bake for 10-15mins.
Assemble:
1. Place the cake in a 7" loose bottom tin.
2. Spread the whipped on top of the cake.
3. Place the cuts fruits nicely on top.
4. Freeze/Chill the cake for 2 hours.
5. Dissolve instant jelly in 100g hot water.
6. Pour it over the chilled cake.
7. Chill in the fridge till set.
8. Unmould the cake, ice the side of the cake with whipped cream & decorate as desired.
