Banana Sunflower Seed Cake
Ingredients:
3/4 bananas, mashed (about 2 banana)
1/2 cup unsalted butter, softened
3/4 cup Lactose free milk / water
3 large eggs
2 cups unbleached flour
2 tsp baking powder
1 tsp baking soda
1/2 tsp nutmeg
2 tsp cinnamon
1 tbsp sunflower seed
Method:
1. Preheat oven to 180 deg c
2. Sieve flour, baking powder, baking soda, ginger and cinnamon together in a medium bowl. Set aside.
3. Beat together the bananas and butter until creamy.
4. Beat in milk and eggs one at a time.
5. Stir dry ingredients into the banana mixture.
6. Stir in sunflower seed.
7. Spoon batter evenly into a prepared bundt pan.
8. Bake for 35 minutes.
9. Cool on wire rack for 5 minutes.
10. Remove from pan and let cool completely on a wire rack.
